Mexican street corn deviled eggs recipe
Ingredients:
- Dozen eggs
- Cilantro, basil, or parsley for garnish
- One 20oz. can of corn
- Cotija cheese (for garnish)
- 3-4T ¡Yo Quiero! elote dip
- Hot sauce optional
Directions:
- Add eggs to a large pot cover with water and bring to a boil and cover.
- Turn heat off. Let sit for about 10 minutes in hot water before removing from pot.
- Run eggs under cool water then peel the eggs
- Slice eggs into half lengthwise, remove the yolk and set aside
- Garnish the cut side of the egg with chilli lime seasoning
- Heat skillet to medium heat and add 1-2 tbsp of oil. Cook corn for 5-7 minutes to desired charred amount
- In a separate bowl mix ¡Yo Quiero! Elote dip with egg yolks until evenly incorporated to your desired consistency. Season with salt and pepper if desired.
- Add yolk mixture to food storage bag and seal. Cut off one corner of the bag to act as a piping bag and fill each egg with yolk mixture.
- Garnish eggs with corn, cotija cheese, and cilantro
¡Yo Quiero! Walking nacho cups
Ingredients:
- The following ¡Yo Quiero! dips
- chunky guac
- spicy bean dip
- mild salsa
- queso blanco
- corn salsa
- escabeche
- tortilla chips
- 1/2 c. shredded cheese (for garnish)
- 1 -2 cans drained sliced black olives (for garnish)
- lime wedges
Directions
- Evenly divide ¡Yo Quiero! spicy bean dip in each cup making an even layer, next spread the white queso over the beans, followed by guacamole, and top with salsa and/or escabeche.
- Top with olives, cheddar cheese, and serve with lime wedges and chips
